The snow that hit the eastern United States over the weekend has made it's way to the Midwest and we've been 'blessed' with about a foot of snow over the last 20 hours, with more to come! In preparation for our anticipated entire evening of snow-blowing and shoveling, I made a quick and hearty dinner of lemony chicken soup with this great salad.
For this delicious and easy salad you will need:
1/4 c. dried blueberries or cranberries (I actually used dried currants for mine)
3 Tbsp balsamic vinegar
1/4 c. olive oil
1 (5-6 oz pkg) baby spinach leaves
1/4 c. slivered or sliced almonds
Combine the berries and vinegar in salad bowl and let stand about 2 minutes (the soak in vinegar will soften the dried fruit nicely!)
Whisk in oil and season with salt and freshly ground black pepper to taste. Toss with spinach and almonds. Makes 4 servings.
It was a delicious and healthy accompaniment for my chicken soup!
